White Bean and Spinach Deep Dish Pizza

A decadent and rich dish without the calorie bomb. Quick and easy to make, this is perfect for a lunch or dinner option.

Ingredients

  • 1 container Pizza Crust (aim for 960 kcal for the whole crust)
  • 1 tbsp Extra Virigin Olive Oil
  • 8oz Baby Spinach
  • 1/2 cup crumbled feta
  • 2 large Eggs
  • 6 garlic cloves
  • 1 cup (55g), Ricotta Cheese Low Fat
  • 1/2 a can of Cannellini Beans
  • 1.25 cups (28 grams), Mozzarella Shredded
  • 3/4 teaspoons salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon basil
  • 1/2 teaspoon parsley
  • Splash of hot sauce (optional)
  1. Preheat your oven to 360 degrees.
  2. In a large pot, saute the minced garlic in the olive oil for a minute or two, then throw in the spinach until wilted. 
  3. Add the ricotta and take off the heat. Mix well, then add the crumbled feta and the drained beans. Mix in .75 cups of mozzarella cheese. Season with salt, pepper and herbs.
  4. Whisk the eggs in a bowl, then add them into the filling and mix well.
  5. Spread out your crust in a 9×13 baking dish that has been greased, pushing the dough up the edges to form a deep dish crust. Spread the spinach filling inside. Top with your remaining half cup of mozzarella cheese.
  6. Bake for 28-30 minutes, or until your cheese and crust reach desired color. I like to broil for a bit at the end to really brown the cheese.
