Bacon Ricotta Tart

This is one of my favorite recipes. Its extremely savory and satisfying, and packs a protein punch. You can easily make it lower calorie by doing 6 portions instead of 4 and serving with a side salad.

Ingredients

  • 1 egg yolk
  • 1 full egg
  • 1 pack Green Onions
  • 3 cups Ricotta Cheese Part Skim (24 oz)
  • 6 bacon Slices
  • 2 oz Parmesan Cheese, shredded
  • 1 pillsbury pie crust
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  1. Preheat your oven to 375 degrees.
  2. Cook your bacon in your preferred method, setting the bacon grease. Let the bacon cool.
  3. Separate the white parts of your green onions and chop them up, then fry them in the bacon grease until they start to brown. 
  4. Mix the cooked onions with the ricotta cheese.
  5. Chop your green onions into slices
  6. Add the egg yolk, salt, pepper, and green onions.
  7. Roll the pie crust out into a round pie dish, then fill with the ricotta mix. 
  8. Chop your bacon into bite sized pieces and spread over the top of the ricotta mix, pushing down lightly so they are firmly in place.
  9. Bake for 45 minutes.

Idea: This recipe also converts easily to mini hand held tarts for a party. Just cut the dough into circles using the mouth of a mason jar, or cut them into squares, and bake in a muffin tin with the filling evenly distributed amongst the tarts and 1 piece of bacon on each.
