Pita Veggie Hummus Sandwich, Cold or Hot

This lazy sandwich is a great picnic or hike meal. It travels well wrapped up in tin foil, and has some great macros to fuel you up. It’s also highly customizable: Add your own veggie combo, change the cheese type, or the hummus flavor! When I eat this at home and am feeling like a hot meal, I roast the sandwich open faced in the oven until the cheese is melted.
Ingredients
- 1 medium red bell pepper
- 7.5 slices Tofurkey Plant-Based Deli Slices Hickory Smoked (half a pack)
- 2 pieces of Toufayan Flatbread (the large kind, 240 kcal each)
- 3 slice Provolone Cheese
- 5 tbsp Sabra Hummus
- Wash and prep your bell pepper, deseed it and cut it into slivers.
- Spread 2.5 tablespoons of hummus evenly on each flatbread.
- Lay your bell pepper slices on your flatbreads, pressing them into the hummus.
- Layer 3.75 slices of tofurkey on each flatbread, then top with 1.5 slices of provolone cheese.
- Enjoy cold or hot!
