Pita Veggie Hummus Sandwich, Cold or Hot

This lazy sandwich is a great picnic or hike meal. It travels well wrapped up in tin foil, and has some great macros to fuel you up. It’s also highly customizable: Add your own veggie combo, change the cheese type, or the hummus flavor! When I eat this at home and am feeling like a hot meal, I roast the sandwich open faced in the oven until the cheese is melted.

Ingredients

  • 1 medium red bell pepper
  • 7.5 slices Tofurkey Plant-Based Deli Slices Hickory Smoked (half a pack)
  • 2 pieces of Toufayan Flatbread (the large kind, 240 kcal each)
  • 3 slice Provolone Cheese
  • 5 tbsp Sabra Hummus
  1. Wash and prep your bell pepper, deseed it and cut it into slivers.
  2. Spread 2.5 tablespoons of hummus evenly on each flatbread.
  3. Lay your bell pepper slices on your flatbreads, pressing them into the hummus.
  4. Layer 3.75 slices of tofurkey on each flatbread, then top with 1.5 slices of provolone cheese. 
  5. Enjoy cold or hot!
