Spicy Blackberry Jam Breakfast Sandwich

The chipotle cream cheese and the blackberry jam create a perfect marriage of sweet, spicy & savory for this filling and high protein vegetarian breakfast sandwich.

Ingredients

  • 2 slices of Aged White Cheddar
  • 4 slices of Cinnamon Raisin Bread (I use Dave’s Killer brand) you can use whatever bread you like here really, but I prefer that extra sweetness of the cinnamon raisin bread
  • 3 large eggs
  • 2 morningstar vegan sausage Patties
  • 2 tablespoons ⅓ less Fat Cream Cheese
  • 2 tablespoons of Blackberry Jam (less if you want it less sweet)
  • ½ tsp Chipotle Tabasco Sauce (more if you want it more spicy)
  • 1 tsp almond milk (unsweetened original)
  1. Mix the cream cheese with the chipotle hot sauce until it is to your liking. Set aside.
  2. Toast your raisin bread and heat up your sausage patty as directed on the packaging. 
  3. Spread the jam on one side of a toast piece and the chipotle cream cheese on the other. 
  4. Mix your eggs in a mixing bowl with the milk and salt and pepper to taste (I usually do about ¼ tsp of each).
  5. Heat a nonstick skillet, then lower the heat. You want the heat to be low, this make the egg take a bit to cook but you get the very best quality fluffy egg patty this way. 
  6. To make the egg patties you can either use round silicone molds or the lids of mason jars. Spray the inside of the mold or jar lid well with panspray, setting two next to each other (or if you have a small pan, one at a time). 
  7. Pour half the egg mixture into each mold/lid, then let cook until bubbly. At this point you’ll use a small mixing spatula to mix the egg a bit so the raw egg seeps in under the cooked egg inside the mold/lid. Repeat this process until most of the egg patty is cooked. 
  8. When you feel confident your egg is cooked enough to not spill, use a spatula  to get under the mold/lid and flip. Cook for about a minute, then remove the mold/lid. Check that the egg patty is cooked to your liking and flip more if needed. Alternatively you can make an omelet style egg and cut it in half for your sandwich.
  9. Assemble your sandwiches with cheddar cheese, sausage and egg patty.
