Refreshing Veggie & Herbs Pasta Salad

This pasta salad is ideal for summer, very flavorful and fresh. Great for picnics or weeks where you don’t have a lot of time to meal prep.

The Pasta Salad Ingredients

  • 1 cup Frozen Green peas
  • ½ cup Frozen corn
  • 1 pint of Cherry or Grape tomatoes
  • 1/3 cup Green Olives
  • 1 box of Barilla Protein PLUS either Rotini or farfalle
  • 1 medium yellow bell pepper
  • 1 orange bell pepper or red bell pepper
  • 1 can black beans
  • 1 can of kidney beans
  • 1/2 lb Broccoli heads
  • 5 ounces of carrots
    • Optional: parmesan cheese to top
  1. Start a big bowl or container for your pasta, veggies and sauce to be mixed in. 
  2. Julienne your carrots
  3. Drain your beans, place them in the bowl.
  4. Chop your bell pepper, place them in the bowl.
  5. Cook your pasta in a large pot in salted water. When it’s done, drain and add them to the container with the bell pepper, beans, and carrots. Add the olives and mix well, then cover with the sauce and mix well.
  6. Boil more water in the pot you used for the pasta and re-salt it. Once boiling, add the frozen corn and peas and wait for the water to come to a boil again. Blanche your broccoli in the boiling water with the other veggies for 3 minutes, then drain and rinse in cold water.
  7. Wash your tomatoes, cut in half if desired or serve whole.
  8. optional: serve with parmesan cheese on top for some added saltiness.

The Sauce Ingredients

  • ⅓ cup Good quality Olive oil
  • 15 fresh basil leaves
  • 1 pack of chives or 2-3 tbsps
  • 3 tbsps fresh parsley (or frozen)
  • ¾ tsp salt
  • ½ tsp pepper
  • 1 tablespoon + 1 tsp Dijon mustard
  • 3 tsp apple cider vinegar
  • 3 tbsps Lemon juice
  • 2 teaspoon Honey
  • 2 cloves of garlic
  • 2 tbsps of water
  • Sweetener as needed (if lemon is very tart you might need it)
  1. Place everything in a food processor and blend well. Taste and add sweetener is necessary. The herbs amount here are about what I usually add, but you can add more or less if you want, it’s really a matter of taste preference and I taste the dressing as I make it and add more herbs if needed
