Garlic Red Pepper & Chik’n Pizza

I’m a garlic lover, so this is one of my favorite easy meals to throw together. It gets an entire head of roasted buttery garlic, mixed with cheeses, black beans (and optional chik’n strips) for protein and some fresh bell pepper slices.

The Ingredients

  • 1 crust, Pizza Crust (I use Pillsbury classic)
  • 1 very large Head of Garlic or two smaller ones
  • Half a can of black beans
  • ½ tbsp of Olive oil
  • 2 large Red bell peppers cut into strips
  • 1 cup of shredded mozzarella cheese
  • 3/4 cup Pizza Sauce (I use Rao’s brand)
  • 2 oz Sharp Cheddar Cheese, shredded
  • Optional: 1/2 bag of Morningstar Chik’n Strips (thawed)
  1. Preheat your oven to 400 degrees for your garlic. Now is also a good time to take your chick’n strips, if using, and leave them on the counter to thaw.
  2. Prepare the garlic head: peel off the papery outer layer of the whole bulb, then cut ¼ inch off of the top of the cloves while they are still in their bunch, exposing the interior of the cloves. Put the garlic either in a muffin tin, cut side up, or on a baking sheet. Drizzle the garlic head with the ½ tablespoon of olive oil, using your fingers to rub the oil into the exposed cloves. Sprinkle them with salt and pepper, then cover with aluminum foil. Bake for 35 minutes, or until the cloves are lightly brown and feel soft. Let these cool just until touchable, then squeeze out the baked garlic cloves from their paper casing. Set aside.
  3. Roll out your pizza dough on a rectangular or round baking sheet and spread the pizza sauce
  4. Sprinkle the shredded cheddar and half of the mozzarella cheese over the pizza.
  5. Evenly distribute the roasted garlic, drained beans, thawed chick’n strips and bell pepper strips over the sauce, then sprinkle the other half of the mozzarella cheese over everything. 
  6. Bake the pizza according to the instructions on your crust. I use Pillsbury crust and bake for 18 minutes at 400 degrees. Sprinkle salt & pepper over the pizza as desired.

OPTIONAL: If you don’t want to use Chik’n strips and don’t care about the protein content, you can omit them completely and have 505kcal, 17g fat, 66g carbs, and 23 grams protein.
