Holiday Veggie Stuffing

This sweet and savory stuffing is a must for thanksgiving, or if you’re feeling like making yourself a holiday feast whenever! The freshness and brightness of this recipe definitely beat the out-of-a-box stuffing’s I had as a kid, and it’s vegetarian and can be made vegan by subbing margarine for butter!

Ingredients

  • 1 large Leek or two small ones
  • 1/2 cup sage leaves
  • 1 tsps rosemary
  • 2 tsps Salt
  • 2 tsps black pepper
  • 1 large White onion
  • 1 Medium Honeycrisp apple or red delicious
  • 2 cloves Garlic
  • 3.5 cups Reduced Sodium Vegetable Broth
  • 1 teaspoon Onion powder
  • ½ tsp Cayenne Pepper (optional, don’t add if you hate spicy)
  • 1 cup Dried Cranberries
  • 8 tablespoons unsalted Butter (Margarine if Vegan)
  • 2 large Carrots
  • 4 Celery stalks
  • 2 baguettes, 11oz or so ( I used 1 and 2/3 of a two pack of costco baguettes)
  • Pan spray

I pair this stuffing with this Vegan Seitan Roast recipe for a well rounded meal, and top it with gravy!

  1. Preheat your oven to 350.
  2. Chop your sage leaves.
  3. Mince your onion, then chop your carrots and celery into small pieces (I use a food processor to achieve the perfect size, pulsing lightly until the size looks good).
  4. Chop up the white parts of your leek.
  5. In a large pot, melt the butter. Add your chopped sage and 1 tsp of salt and cook for 2 mins.
  6. Add your leek, onion, carrot and celery to the pot and cook over medium heat for about 10 minutes, covered and mixing occasionally.
  7.  Core your apple, then dice it and add it to the pot.
  8. Mince your garlic and throw it into the pot and cook for another minute.
  9. Add your broth, cranberries, the black pepper, cayenne pepper and onion powder, mix well and cook for another 10 minutes.
  10. Adjust seasoning now, adding more salt or pepper if needed.
  11.  You will need a large 4.8 quart baking dish, or two 9X13 dishes. Spray them well with pan spray to avoid sticking.
  12. Cut your baguettes into cubes and place them in the baking dish. Pour the contents of the pot over the baguette cubes and mix well, until most of the liquid has absorbed. 
  13. Bake in the oven for 40-50 mins, or until everything is golden brown.
