Brazilian Salsa, Rice & Seitan Steak

Brazilian Salsa from my childhood, combined with a veggie rice and the best Seitan steak I have ever had, from “It Doesn’t Taste Like Chicken” . Seriously, this steak was easy to make and delicious. You can use any store bought seitan meat for this, but I highly recommend trying to make it yourself.
Rice & Steak Ingredients
- 1 recipe Seitan steak from “It Doesn’t Taste Like Chicken” (link in the recipe description)
- 6 cloves of garlic
- 1 tbsp olive oil
- .75 cups dry white rice
- .25 cups of frozen corn
- .5 cups frozen peas and carrots
- 1 tsp salt
- Mince your garlic.
- Heat the olive oil in a pot over medium low heat for about two minutes, then add your rice and stir.
- Continue to saute for another 2 minutes, stirring occasionally.
- Add 1.5 cups of water, the frozen corn and the frozen peas & carrots
- Bring to a boil, then reduce to a simmer and cook for 18-20 minutes, or until tender. Add more to water if needed.
- Remove from the heat and let sit covered for 5 minutes.
The Salsa Ingredients
- 1 fresh tomato
- Half a green bell pepper
- 1.5 tbsps of good quality olive oil
- 1.5 tbsps apple cider vinegar
- Half a white onion
- 1/2 teaspoon sugar
- 2 tbsp of fresh parsley
- Dice all of your ingredients. Mix together and let sit in the fridge for at least 2 hours.
