Buffalo Cauliflower Pizza with Garlic Cashew Sauce

A delicious spicy pizza with a refreshing garlic sauce drizzled on top.

Pizza Ingredients

  • 1 container thin Pizza Crust (aim for 600 kcal total in container)
  • 0.75 cup, Pizza Sauce
  • 1.75 cup, Shredded Mozzarella, part skim
  • 0.50 cup (8 fl oz), Water
  • 0.50 cup, All Purpose Flour
  • 0.66 cup(s), Frank’s Red Hot buffalo sauce
  • 1 tbsp, Butter Unsalted
  • 1 large medium sized Cauliflower Head
  • 1 tbsp, Olive Oil
  • 1 tbsp, Garlic powder
  1. Preheat your oven to 450 degrees. 
  2. Cover a sheet pan with parchment paper.
  3. Chop your cauliflower into bite sized chunks.
  4. In a large bowl, combine the flour, water, olive oil and garlic powder. Whisk until it forms a sort of paste. Toss the cauliflower in the paste and mix until evenly coated, then lay out on the baking sheet so they are evenly spaced.
  5. Bake for 15 minutes.
  6. Melt the 1 tbsp of butter in a bowl, then add the buffalo sauce.
  7. When the cauliflower is out of the oven, toss in the buffalo sauce and butter mix, then place back onto the baking sheet and evenly space again.
  8. Pop back into the oven and bake for another 20-25 minutes.
  9. Lower the heat in the oven to 425 (or whatever temperature is on your pizza dough packet)
  10. Spread the pizza dough onto a baking sheet or round pizza pan.
  11. Spread the .75 cups of pizza sauce onto the dough. Sprinkle half your cheese.
  12. Place in the oven and bake for the amount of time your pizza dough package instructs, minus about 2 minutes.
  13. Take out of the oven and spread with the cauliflower, then sprinkle the remaining cheese on everything. Put back into the oven just until the cheese melts, another 2-5 minutes or so.
  14. When out of the oven, drizzle with the garlic cashew sauce. Enjoy!

Garlic Cashew Sauce Ingredients

  • 1 clove , Garlic
  • 0.25 Cup, Raw Unsalted Cashews
  • .75 teaspoon, Lemon juice
  • 0.25 teaspoon, Onion powder
  • 0.25 teaspoon, Salt
  • 1.5 teaspoon, Nutritional yeast
  • .25 cups water
  • Hot water to soak
  1. Soak your unsalted cashews in the hot water for 30 mins.
  2. Drain the cashew, then add them to a food processor with the rest of the ingredients. Blend until creamy, then set aside.
