Human Bean on a budget

One Dish Chorizo, Sweet Potato and Black Bean Casserole.

I love casseroles, and this is one of the easiest ones in my recipe book. It’s delicious and filling, and requires minimal hands on work.

Ingredients

  • 3 clove, Garlic Clove
  • 1 tsp, Spices, chili powder
  • 3 tsps Garlic Salt
  • 1/2 tsp thyme
  • 1 pack Green Onions
  • 2 cans of black beans, rinsed and drained
  • 1 tbsp Cumin
  • 1.75 lbs of sweet potatoes, cubed
  • 1 cup Corn
  • 2.5 cups Vegetable Broth
  • ¾ Cup raw, Quinoa, Raw
  • 1 container Morningstar Chorizo Crumbles
  • 6 oz Sharp Cheddar Cheese Block, shredded
  1. Preheat your oven to 375 degrees
  2. Chop up your green onions, separating the whites from the greens, set aside.
  3. Mince your garlic, set aside.
  4. In a 9X13 baking dish, add the garlic, whites of the onions, all the seasonings, the corn, quinoa, beans, cubed sweet potatoes, vegetable broth and chorizo. Mix well.
  5. Cover with foil and bake for 60 minutes. 
  6. Remove the foil and mix in half the green onions. Bake for another 15 minutes.
  7. Remove from the oven, top with the shredded cheese and then bake for another 8 minutes, or until the cheese is fully melted. Serve with the rest of the green onions as a topping.
