Bacon Ricotta Tart

This is one of my favorite recipes. Its extremely savory and satisfying, and packs a protein punch. You can easily make it lower calorie by doing 6 portions instead of 4 and serving with a side salad.
Ingredients
- 1 egg yolk
- 1 full egg
- 1 pack Green Onions
- 3 cups Ricotta Cheese Part Skim (24 oz)
- 6 bacon Slices
- 2 oz Parmesan Cheese, shredded
- 1 pillsbury pie crust
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- Preheat your oven to 375 degrees.
- Cook your bacon in your preferred method, setting the bacon grease. Let the bacon cool.
- Separate the white parts of your green onions and chop them up, then fry them in the bacon grease until they start to brown.
- Mix the cooked onions with the ricotta cheese.
- Chop your green onions into slices
- Add the egg yolk, salt, pepper, and green onions.
- Roll the pie crust out into a round pie dish, then fill with the ricotta mix.
- Chop your bacon into bite sized pieces and spread over the top of the ricotta mix, pushing down lightly so they are firmly in place.
- Bake for 45 minutes.
Idea: This recipe also converts easily to mini hand held tarts for a party. Just cut the dough into circles using the mouth of a mason jar, or cut them into squares, and bake in a muffin tin with the filling evenly distributed amongst the tarts and 1 piece of bacon on each.
