“Fried” Rice with Sweet & Sour Seitan

My take on fried rice the lazy way, with less oil and less actual frying. The sweet & sour seitan is the perfect pairing for this filling dish. I make it with this fabulous seitan beef loaf recipe!
The Rice Ingredients
- 1 tbsp avocado oil
- 1 cup dry Thai jasmine rice or similar, cooked and one day old
- 2.50 cups Mixed Frozen Vegetables (thawed)
- 5 cloves Garlic
- 1 Tbsp Seasoned Rice Vinegar
- 1 tsp Toasted Sesame oil
- Half a bundle of green onions
- 1 tbsp Soy sauce
- Cook your white rice in a rice cooker or on the stove top with 2 cups of water and 1 teaspoon of salt. (This step is best done the day before so it is day old rice that has sat in the fridge all night, but if you have to use fresh rice it will still work)
- Mince your garlic. Separate the whites of the onions from the greens. In a large pot, heat the sesame oil and avocado oil on medium until hot, then add your garlic and the whites of the onions. Saute for 2-3 minutes, until golden, stirring constantly.
- Add your veggies, your cooked rice, soy sauce, rice vinegar and black pepper and mix well. Continue cooking on high for about 5 mins more. Add in the green onions.
The Sweet & Sour Beef Seitan Ingredients
- Half a loaf of A Virtual Vega seitan beef (link below) or your favorite seitan that equals 24 grams of protein per serving, and around 199 kcal.
- 4 cloves of Garlic
- ½ tbsp toasted sesame oil
- 2 tablespoons Hoisin Sauce
- 1 tbsp Soy sauce
- 1 tbsp Seasoned Rice Vinegar
- 1 tbsp cornstarch
This is the Vegan Beef recipe, its prefect for this recipe so do yourself a favor and make a loaf the day before.
- Mince your garlic and sauté it in the oil for a minute or so, just until fragrant.
- Add your hoisin sauce, soy sauce, rice vinegar and cornstarch and whisk until combined.
- Bring to a simmer, then set heat to low and cook until thickened.
- Cut your beef into strips or chunks (your preference) and add to the sauce. Let cook for about 3 minutes, stirring occasionally to prevent burning. We are just cooking long enough to heat the seitan through and let it absorb some flavor.
- Serve over your rice.
