Mongolian Less-Beef Over Rice with Broccoli

A sweet and savory Asian inspired dish, this meal is super filling and delicious. It uses 1lb of lean ground beef for 6 servings, reducing meat consumption and cost by adding lentils to the meat. If you don’t like lentils that much, you should still give this a try! The lentils really blend in with the meat.
Ingredients
- 1 jar or can of baby corn, chopped
- 1 can of brown or green lentils
- 1 bunch of Fresh Green Onions, chopped (greens separated from the whites)
- 1 lb 93 Percent Ground Beef
- 1-1.5 tbsp(s), brown sugar
- 8 cloves Garlic, minced
- Another 4 cloves minced garlic, seprate
- 1 tbsp Minced Ginger
- 3 tbsps Cornstarch
- 1/2 tbsp seasoned rice wine vinegar
- 2 tablespoons Toasted Sesame Oil
- 5 tsp Chili Garlic sauce
- 1/2 tsp red pepper flakes
- 1/4 cup Hoisin Sauce
- 1 cup Beef Broth (or a beef bouillon cube dissolved in 1 cup of water)
- 1/2 cup to 3/4 cup soy sauce
- 1.50 cup dry Jasmine Rice
- 1.50 lb(s), Broccoli crowns
- 1 teaspoon salt
- Chop your broccoli into small floret pieces. Set aside.
- Thoroughly rinse your rice.
- Saute your 4 cloves of minced garlic in the 1 tablespoon of sesame oil for 1-2 minutes, just until fragrant.
- Add your rice and saute for another 2 minutes, then add 2.5 cups of water and the 1 tsp of salt.
- Bring to a boil, then reduce heat to low and cook for 18-20 minutes or until tender, adding more water if needed.
- Let stand for 5 minutes, covered.
- In a large pot or skillet, brown your beef with 1 tablespoon of sesame oil until cooked through and no longer pink.
- Add the 8 cloves minced garlic, minced ginger and the white parts of your green onions. Cook for another minute.
- Add the chili garlic sauce, 1 tbsp brown sugar, 1/2 tbsp rice wine vinegar, hoisin sauce and half the beef broth.
- In a bowl or measuring cup, whisk the cornstarch into the other half of your broth. Pour that into your pan.
- Continue to cook on medium-low heat until the sauce has thickened, stirring occasionally. Taste and add more brown sugar or soy sauce as needed.
- Toss in the greens of your green onions and cook for an additional minute.
- Steam your broccoli to your tenderness preference.
- Serve the beef over and broccoli rice.
