Soy Curl Shawarma with Yellow Rice

I recently discovered soy curls and they are a delicious, easy, and protein rich meat alternative! For this recipe I marinate the curls and serve with a delicious tangy white sauce along with yellow veggie rice.

Ingredients

  • 1 tablespoon of Butter
  • 2 medium Carrots
  • Salt
  • 1 medium, Yellow onion
  • Cinnamon
  • Cumin
  • chili powder
  • Turmeric
  • Black pepper
  • paprika
  • 6 clove of Garlic
  • ¾ cups of Plain Nonfat Greek Yogurt
  • 3 tbps Tahini
  • 3 tsps Lemon juice
  • 1 Tbsp Light Mayo
  • 2 cups frozen Peas
  • 1 bag Butler’s Soy Curls
  • 3 tbps Olive oil
  • 1.25 cup Jasmine Rice dry
  • Optional: Chili Onion Crunch or chili oil to serve
  1. The day before, rehydrate your soy curls with 4 cups of warm water for 15 mins, then drain.
  2. In a ziplock bag, add 4 cloves of minced garlic,1/2 teaspoon cumin,1 teaspoon paprika, 1/2 teaspoon cinnamon, ½ teaspoon salt, 1/2 teaspoon black pepper and 2 tablespoon of oil and .25 cup of water. Add the soy curls and massage the marinade into the curls, then leave overnight in the fridge to marinate.
  3. To prepare the white sauce, whisk together the mayo, greek yogurt, tahini, lemon juice, 1 to 2 minced garlic cloves, ¼ tsp chili powder and ¼ tsp of salt. Taste and adjust lemon juice, salt and pepper levels to your preference. 
  4. Chop your carrots into small cubes and set aside.
  5. Finely mince the onions and place in a large pot with 1 tbsp of olive oil and 1 tbsp of butter. Cook on medium heat for 6-8 minutes, stirring occasionally.
  6. Mince the remaining 8 cloves of garlic and add to your pot, cooking for another minute.
  7. Add the rice and stir for a few minutes, then add the water, the frozen peas, carrots , ½ teaspoon cinnamon, 1 teaspoon salt, ½ teaspoon turmeric, ¼ teaspoon cumin and 1/2 teaspoon black pepper. Bring to a boil, then reduce to a simmer and cook covered for 20 minutes, or until the rice is tender.
  8. While your rice is cooking, pour your soy curls into a nonstick skillet and fry until browned, or alternatively air fry for 10 minutes at 370.
  9. Serve the rice with the soy curls and white sauce and chili crisp, if using.
