Sheet Pan Silken Tofu Soup with Cheesy Toast Points

This soup is incredibly easy to make and very delicious. Perfect for a cold, rainy day.
Ingredients
- 1 tbsp Herbs De Provence
- 1/4 tsp Crushed Red Pepper Flakes
- 1 tsp Salt
- 1 large Red bell pepper
- ½ tsp ground Black pepper
- 1 tsp Chili powder
- 2 lbs Vine Ripened Tomatoes
- 2 medium Carrots
- 6 cloves of Garlic
- 2 oz Shallot
- 4 cups Vegetable Broth
- 1 can of cannellini beans
- 15 oz Silken tofu
- 1 tbsp + 1 tsp Olive Oil
- 1.5 cups of shredded cheddar
- 1.5 cups shredded part skim mozzarella
- 9 slices of pepperidge farm sourdough bread
- 3 tbsp smart balance margarine
- ½ tsp garlic powder
- 1/2 tsp oregano
- Preheat the oven to 400 degrees (leave the oven on after the veggies are done to toast the cheese points)
- Cut your tomatoes into large chunks.
- Cut your shallots into large chunks.
- De-core your red bell pepper and cut it into chunks.
- Peel your garlic.
- Peel your carrots and cut them into small pieces.
- Line a large sheet pan with parchment paper.
- Place your tomatoes, garlic, shallots, carrots and bell pepper on the sheet pan and drizzle with the olive oil. Add the salt and pepper, then mix until coated.
- Bake in the oven for 40 minutes, until the skin of the tomatoes pucker and the carrot is tender.
- Blend your sheet pan contents in a blender with the tofu, vegetable broth. Drained beans, chili powder, herbs and crushed red pepper flakes.
- Remove the parchment from your sheet pan.
- Prepare your cheese points: slather butter or margarine on one side of each slice of bread and then cut each slice diagonally to make 2 triangles. Place them butter side down onto the sheet pan.
- Mix the cheddar and the mozzarella in a bowl together. Add 1/2 tsp of garlic powder and 1/2 tsp of oregano.
- Evenly distribute the cheese over your bread slices.
- Bake the bread for 5-8 minutes, until the cheese is melty and the bread is toasted.
- Serve each bowl of soup with 3 triangles of cheese toast.
Note: This can be made vegan by using vegan cheese for the toast points, though you will lose some protein in the macros.
