Spicy Chick’n and Waffles
This is one of my lazy meals, eaten when I don't have time to meal prep but still want to hit all my macros. It's fast, cheap, and can be made with only a toaster and a microwave.
Creamy Pinto Bean & Spinach Quesadilla
A very easy, very filling quesadilla. I prep the filling and leave it in the fridge, to use as needed throughout the week for fresh quesadillas. (good for up to 4 days in the fridge)
Vegetarian Rice, Bean & Chorizo Burrito
A delicious and easy meal prep, you can assemble these burritos and leave in your fridge to air fry, microwave, pan fry or bake to serve in a few minutes! They are good in the fridge for up to 4 days, or can be frozen for up to 3 months and thawed on the counter or overnight in the fridge.
